My family moved to Vegas in 2019, and one of the first things we did was try to find all of the best Mexican restaurants off the Las Vegas Strip. After trying several authentic Mexican Restaurants, we discovered Panchos in Summerlin, and it quickly became one of our favorite local taco shops!
I say Taco Shops, but this restaurant is so much more. For instance, the beautiful style and architecture of the restaurant make you feel like you’re eating in old Mexico. There is a relaxed feel and atmosphere when you dine that makes you feel like you’ve taken a trip to Mexico.
Panchos bar area is set up and designed for sports fans! You will see Autographed Jerseys, iconic sports photos, and legendary sports memorabilia.
Not to mention how close this location is to the Aviators baseball stadium ⚾ or City National Arena where the Vegas Golden Knights practice. 🏒

We have been here multiple times, and our dine-in experience has always been consistent with fast and professional service.
If you are hungry and want great food, this is a place you can come and get served quickly without waiting a long time for your main course. Plus, chips & salsa are brought to your table almost as soon as you sit down.
Another reason I love this place is that if you want, you can sit and watch a game in the bar and not feel rushed to eat.

The restaurant is kept clean, and the dirty dishes don’t clutter the tables. As soon as we finished our dinner, a wait staff member removed our empty plates from the table.
We go out to eat at Panchos frequently and love revisiting, as well as taking food home. They have made mistakes on to-go orders a few times, so I recommend double checking your order before you leave the restaurant. Otherwise, this food has always left me satisfied and craving more.

My favorite food item on the menu is currently the “Tacos al Carbon.” This order comes with two tacos stuffed full of steak and peppers, a side of rice, beans & pico de Gillo. I like to customize my order by adding a side of onions, cilantro, & shredded cheese.
These tacos have so much flavor packed inside! And if you are looking for amazing Mexican food, this is it! I can’t even begin to tell you how much flavor these tacos have; they are unlike anything I have tried at any other authentic Mexican restaurant.
